Instant mashed potatoes (dried potato that you add milk or water to) were first sold in shops in 1955.

Marie Antoinette paraded through the French countryside wearing potato blossoms in her hair. Potatoes were said to become fashionable soon after this.

Freeze-dried potatoes

The Aymara Indians, who lived in South America, invented freeze-dried potatoes, or chuño, which you can find in Walter's photo story. Chuno are still made in the same way as they were in the times of the Incas.

The potatoes are spread on the ground on frosty nights. During the day they are covered with straw to protect against the burning rays of the sun. They turn completely white.

After exposure to the frost, woman and children trample on them to get rid of moisture and wear away the peel. Then they are put in a stream of running water for a few weeks in order to wash out the bitter taste. Then they are dried out for two weeks. These potatoes can be stored for up to four years, which is really useful if you can't always grow enough fresh food to eat.
